Apple Cake

Ingredients

  • 3 cups peeled, chopped apples
  • 1 cup sugar
  • 1/4 cup cooking oil
  • 1 egg, beaten
  • 1 cup unsifted all-purpose flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 3/4 cup chopped walnuts or pecans

Instructions

Mix apples and sugar; let stand 30 minutes. Add oil and beaten egg. Blend. Mix and sift all dry ingredients three times. Stir into apple mixture. Add vanilla and walnuts. Turn into a well-greased and floured 8-inch square pan. Bake at 350 degrees for 45 to 50 minutes. When done, cake springs back when pressed lightly with finger. Serve with Cool Whip or ice cream. May be frosted if preferred.

For extra fiber (and less prep work) leave the skin on the apples. It came out very moist and I liked the low oil content of this version of this recipe.
