Applesauce Cake
Ingredients
- 2 1/2 cups flour
- 2 cups sugar
- 1 cup raisins
- 1/2 cup walnuts or pecans, chopped
- 1/2 cup butter
- 1 1/2 cup applesauce
- 1/2 cup water
- 1 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground allspice
- 1/4 teaspoon baking powder
- 1 1/2 teaspoon baking soda
- 2 eggs
Instructions
Heat oven to 350. Grease and flour rectangular pan, 13x9x2, or 2 round pans, 8 x 9 x 1 1/2. Cream butter and sugar together. Add other ingredients except raisins and nuts and beat on low speed , scraping bowl constantly, 30 seconds. Beat on high speed, scraping bowl constantly, 3 minutes. Fold in nuts and raisins. Bake 60 to 65 minutes for rectangle, 50 to 55 minutes for round layers. Cool and frost if desired. CREAM CHEESE FROSTING 8 oz cream cheese, softened 1 tablespoon milk 1 teaspoon vanilla 4 cups powdered sugar Beat cream cheese, milk and vanilla in 2 1/2 quart bowl on low speed until smooth. Gradually beat in powdered sugar, 1 cup at a time, until smooth and of spreading consistency. Frosts a 13X9 inch cake or fills and frosts two 8 or 9 inch layers.
