Cinnamon apple Cake
Ingredients
- 2 Tbsps butter
- 2 to 3 Tbsps coarsely chopped walnuts
- 1/4 cup light brown sugar, firmly packed
- 1 Tbsp whipping cream
- Dash salt
- 1 medium cooking apple (Rome, Granny Smith, etc,)
- Baking Mix Cake Batter (below)
- Sweetened whipped cream or vanilla ice cream
- 1 egg
- 1 Tbsp oil
- 1/4 cup milk
- 1/2 tsp vanilla extract
- 1/4 cup superfine or granulated sugar
- 3/4 cup buttermilk biscuit mix (Bisquick or eqv.)
Instructions
Preheat oven to 350F. Melt butter in an 8-inch ovenproof skillet or cake pan of equal size. Briefly saute walnut in butter over medium heat. Remove from heat. Blend in brown sugar, 1 Tbsp whipping cream, cinnamon, and salt. Spread evenly over bottom of skillet. Peel, quarter and core apple. Cut each quarter into 4 or 5 slices (lengthwise). Arrange slices in a spiral on top of nut mixture, with 2 to 4 slices in center. Press slices into nut mixture. Prepare Baking Mix Cake Batter. Pour over apples, spreading to cover. Bake about 25 minutes until edges separate for pan and cake springs back when lightly touched in center. Cool in pan 10 minutes. Loosen sides with a knife. Place an 8- or 9-inch plate upsidedown over pan and invert cake onto plate. Rearrange apples and glaze if necessary. Serve warm with sweetened whipped cream or vanilla ice cream. Baking Mix Cake Batter: Beat egg in a medium bowl. Beat in oil. Blend in milk, vanilla, and sugar. Stir in buttermilk biscuit mix to moisten. Beat vigorously 1 to 1 1/2 minutes until smooth.
