French Apple Cake Loaf

"French Apple Cake Loaf is a moist loaf cake filled with fresh apples. It is perfect for breakfast, afternoon tea or a snack. This is a very simple recipe and bakes in 30 minutes with only 10 minutes prep time. This recipe makes two smaller apple cakes but freezes very well so you can enjoy another one later. Pears can be substituted for the apples to change things up and make a whole different cake. Either way, it's delicious! "

NotesThis makes two smaller loaves so one can be frozen for later if desired.

Any apples can be used but I prefer Granny Smith, Honeycrisp, Jonagold, Winesap, and Pink Lady because they hold their shape well in this cake.

Ingredients

  • 1 cup whole wheat flour
  • 1 cup white flour
  • 2 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup sugar
  • 6 ounce vanilla yogurt
  • 3 large eggs
  • 2 teaspoon vanilla extract
  • 1 cup canola oil
  1. Preheat oven to 350 degrees. Grease two 8 by 4 loaf pans.

  2. In a small bowl mix together the flour, baking powder, salt and cinnamon.

  3. In another medium sized bowl mix together the sugar, yogurt, eggs, vanilla and oil. Whisk vigorously until the mixture is very well blended.

  4. While still mixing, stir in the dry ingredients, then switch to a large rubber spatula and gently fold in the apples.

  5. Pour the batter into the pans and bake for about 30 minutes or until toothpick comes out clean and cakes are golden.

  6. Cool on a wire rack and remove from pans before serving.
