Ingredients
- 3 eggs
- 2 cup sugar
- 1 cup oil
- 2 cup self-rising flour
- 2 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 cup chopped walnuts
- 4 cup apples, peeled and sliced
- 6 ounce cream cheese, softened
- 1/4 cup butter, melted
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 350 degrees F.
- Beat eggs until thick and light. Add sugar and oil and beat at medium speed until combined.
- Mix together cinnamon and flour. Add flour mixture to egg mixture. Mix in vanilla and walnuts.
- Distribute sliced apples evenly on bottom of long 2 or 3-quart baking dish sprayed with non-stick cooking spray. Pour cake batter evenly over apples, spread to fill the pan, and bake for 45 minutes to 1 hour.
- For the frosting, beat cream cheese and butter together until fluffy. Add sugar and lemon juice and mix together. Spread over cake once cooled.
