Key Lime Poke Cake
This easy cake recipe couldn't be more moist and delicious. Key Lime Poke Cake has all the flavors of a refreshing key lime pie, but in a soft and sweet poke cake. Like many poke cake recipes, pouring lime frosting into holes in the cake makes it wonderfully moist and full of flavor. Ingredients
- 1 1/3 cup sugar
- 2 cups flour
- 2/3 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3 ounces lime gelatin
- 5 eggs
- 1 1/3 cup oil
- 3/4 cup orange juice
- 1/2 teaspoon vanilla
- 1 teaspoon lemon extract
- 1/3 cup key lime juice
- 1/3 cup powdered sugar
- whipped cream, for garnish
- lime slices, for garnish
Instructions

Preheat oven to 350 degrees F.

Place dry ingredients into mixing bowl.

Add eggs, oil, orange juice, vanilla and lemon extract. Beat until well blended.

Pour batter into a 9x13x2-inch pan; bake 25 to 30 minutes.

Remove cake from oven. Let stand in pan 15 minutes or until almost cool.

Prick cake all over with fork. Drizzle thoroughly with lime juice mixed with powdered sugar. Cover and refrigerate.

To serve, cut into squares, top with whipped cream and garnish with lime slices.
