Louisiana Cake

Ingredients
- 1 1/2 cup hot water
- 1 cup quick oats
- 1/2 cup butter
- 2 eggs
- 1 cup brown sugar
- 1 cup sugar
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup pecans, chopped
- 1 orange rind, grated
- 1/4 cup brown sugar
- 3 tablespoons butter, softened
- 2 tablespoons heavy cream
Instructions
- Preheat oven to 325 degrees F. Prepare 9" x 12" x 2" pan with non-stick cooking spray.
- Combine oatmeal and water and let stand 15 minutes.
- Beat butter, eggs, brown sugar and sugar until creamy. Add oatmeal, flour, salt, soda, orange rind and 1 cup nuts. Beat 2 minutes. Bake for 45 to 60 minutes.
- Combine brown sugar, butter, cream and pecans. Pour over the cake and return to oven on broil for 2 minutes. Watch closely as this burns very easily.
