Mango Upside Down Cake
Turn that frown upside down and make a great upside down cake recipe! Freshly squeezed lemon juice and sweet mangoes go into this wonderful fruity cake. Caramelized sugar and a moist cake make this citrus treat a must.
Ingredients
- 2 cup sliced ripe mangos
- 2 tablespoon lemon juice
- 1 tablespoon margarine
- 1/3 cup brown sugar
- 1/4 cup margarine
- 3/4 cup sugar
- 1 egg
- 1/2 cup milk
- 1 1/4 cup flour
- 2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat oven to 375 degrees F.
- Pour lemon juice over mangos and let stand 15 minutes.
- Melt 1 tablespoon of margarine in 8-inch cake pan or casserole. (Do not use iron skillet as mangos will darken.)
- Add brown sugar and cover with mango slices.
- To prepare cake batter, cream margarine; add sugar and cream; add beaten egg.
- Sift dry ingredients and add alternately with milk. Pour over mangos and bake 50 to 60 minutes. When cake is done, turn upside down and serve while warm.
