Marzipan Christmas Cake

Ingredients

  • 4 1/2 pound butter
  • 8 ounce shortening
  • 5 pound sugar
  • 6 1/2 pound eggs
  • 8 ounce marzipan
  • 6 1/2 pound flour
  • 8 ounce almonds, ground
  • 12 pound currants
  • 6 pound sultanas
  • 3 pound mixed peel
  • 6 ounce rum
  • 1/4 ounce spice
  • 1/4 ounce nutmeg
  • egg colour
  • 2 each orange, zest and juice of
  • 2 each lemon, zest and juice of

Instructions

Cream together the fats and sugar. Work down the Marzipan with a little of the egg and add this to the batter. When light, beat in the eggs a little at a time and add the colour. Sieve the flour and spices together and add these to the batter with the ground almonds. The zest, juice and rum are added to the mixed fruit and this is folded in last. If a dark cake is required, use Barbados sugar and black jack colour. Bake at 350 degrees F.
