Matzoh Meal Chocolate Almond Cake

Ingredients

  • 8 egg yolks
  • 1 1/2 cup confectioner's sugar
  • grated rind of a lemon
  • 2 ounce grated bitter chocolate
  • 1/4 cup orange juice
  • about 2-3 ounces wine (half a wine glass)
  • 1/4 pound pounded blanched almonds
  • 3/4 cup matzoh meal
  • 2 tsp cinnamon
  • 1/4 tsp allspice
  • 8 egg whites

Instructions

Beat egg yolks with confectioner's sugar until thick and lemon colored. Stir in the grated rind of a lemon, bitter chocolate, orange juice, wine and pounded blanched almonds. Sift together matzoh meal with cinnamon and allspice. Fold into the batter. Beat the egg whites until stiff and fold into the batter. Bake in a greased pan in a 350 degree oven about 3/4 of an hour or until a tooth pick inserted in the center of the cake comes out dry.
