New Orleans Fruit Cake
Ingredients
- 2 cups sugar
- 4 eggs
- 2 lbs. pecans
- 2 tsps. vanilla
- 2 cups flour
- 1 teaspoon baking powder
- 1 pound candied pineapple
- 1 pound cherries
- 1 pound dates
Instructions
Beat eggs, sugar and vanilla until frothy; Coat fruits with flour mixture (flour and baking powder). Add egg mixture. Line 2 loaf pans with wax paper and dump 1/2 mixture in each pan. Bake in a preheated 300 degree oven for 1 hour.
