No-fuss Fruit Cake
"You may think you don’t like fruit cake. Some of the versions you get from the store are heavy, dry or gluey. This recipe is nothing like that. It will change your mind about fruit cake. Super tasty dessert. You can add additional spices if you like. A teaspoon of grated ginger or some cardamom would be great additions. The recipe calls for sherry. So, it only makes sense that that this recipe is perfect with dessert wines"

Ingredients
- 2 pound mixed dried fruit
- 2 cup Almond Milk
- 2 cup Almond Meal
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon allspice
- 2 tablespoon sherry
Instructions

In a bowl, place the dried fruit and add the almond milk. Let it soak for about 24 hours in the fridge.

Preheat oven to 340 degrees Fahrenheit.

Grease and line the base of a 9-inch springform pan with parchment paper.

In a bowl mix the spices and almond meal.

Coat the fruit in almond meal

Add the soaked fruit and mix well until fully combined.

Bake in the preheated oven for 1 hour and 30 minutes.

Remove from the oven and brush with the sherry.

Cool completely on a cooling rack.
