- 2 eggs, lightly beaten
- 4 ounces butter
- 1 cup sugar
- 2 cups self-rising flour
- 2/3 cup milk
- 1 teaspoon vanilla
Instructions

Preheat oven to 350 degrees F.

Combine in a large bowl eggs, butter, sugar, flour, milk and vanilla. With an electric mixer beat on low speed until blended, then on high for 3 minutes.

Turn batter into a greased baking dish. Bake for about 20-25 minutes or until a skewer inserted comes out clean.
- Once cake is cooled, top with icing of your choice. Decorate with sprinkles or coconut, if desired.

Can you use regular flour?

Self-rising flour has baking powder and salt already added so, no, you can't use regular flour. There are charts that tell you how much of these ingredients to add to regular flour to approximate self-rising but it's a lot easier to just get a bag of S.R. flour and keep it on hand.
