Orange Mandarin Cake

Ingredients

  • Prepare one box Orange Cake -- pour the juice of two small cans of
  • mandarins into a measurinig cup and add water to make up the required
  • amounts of water on the back of the box for a regular orange cake.
  • Bake as directed and then cool.

Instructions

Mix two instant vanilla pudding as directed on box in a bowl. Set aside. Add a large can of crushed pineapple including juice to a large cool whip in a large bowl. Fold in the instant pudding mixture to make fluffy mixture. Crumble about 1/2 of the cake into the bottom of a class salad bowl. Drop about one can of the drained mandarin oranges over cake. Then spread 1/2 of the fluffy pineapple, pudding and coolwhip mixture over the cake. Repeat and top with fluffy mixture. The longer the cake chills the better. Very moist and pretty. I think I am going to try amd make a strawberry layer cake the same way by using strawberry in the place of mandarin oranges.
