Orange Zucchini Cake
Ingredients
- 2 cup flour
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 1/2 cup sugar
- 1 cup vegetable oil
- 4 eggs
- 1 cup All-Bran cereal
- 2 teaspoon vanilla
- 3 teaspoon grated orange zest
- 1 cup chopped pecans
- 2 cup grated zucchini
Instructions
Combine flour, and other dry ingredients and set aside. In large bowl, beat sugar, oil and eggs. Stir in cereal, orange zest, and vanilla. Pour flour mixture into bowl with sugar and egg mixture and mix. Add zucchini, and nuts and blend thoroughly. Pour into a greased and floured bundt pan. Bake at 350 degrees F. for 35 minutes. Topping: When cool, drizzle with powdered sugar icing that has been flavored with orange peel, if desired.
