Pineapple Ud Cake

Ingredients

  • White Cake
  • 1 3/4 c flour
  • 1 Tbs. baking powder
  • 1/2 teaspoon salt
  • 1/2 c butter, marg, or shortening
  • 1 c sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3/4 c milk

Instructions

Combine flour, baking powder and salt together; set aside. Cream butter, sugar, eggs and vanilla until light. Blend in dry ingredients gradually alternating with milk, beginning and ending with dry ingredients. Topping 1/3 c butter or marg 1 c brown sugar 9 slices pineapple 9 maraschino cherries Melt butter in cake pan; remove from heat. Stir in sugar and spread uniformly on bottom of 9" square pan. Place pineapple slices close together on sugar and decorate cavities with cherries. Cover with cake batter. Bake in moderate oven until toothpick inserted in center comes out clean. Cool 10 mins. Loosen sides of cake and invert gently on cake plate. Serve warm or cold with whipped cream. Bake 65 - 75 mins at 350.
