Raisin Cake
Ingredients
- 1 cup raisins
- 1/2 cup margarine or lard
- 1 cup sugar
- 1 1/2 cup cold water
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cloves
- 1 tsp salt
- 1/2 cup nuts, optional
- 2 cups flour
- 1 tsp baking powder
- 1 tsp soda, dissolved in water
Instructions
Boil raisins, margarine, sugar, water, spices, salt, and nuts for 5 minutes; let cool. Add flour, baking powder and soda to pan; beat with beaters until well mixed. Pour batter into a greased and floured 13x9x2-inch baking pan. Bake at 350 degrees for 30 minutes. Note: This recipe may be doubled satisfactorily.
