NotesIf you want to frost it, you’ll need to wait until it’s cool. But, you can dust it with powdered sugar and decorate it with the some almonds. I highly suggest adding a great ginger sauce with this cake.

Ingredients

  • 1 cup buttermilk
  • 1 cup granulate sugar
  • 2 tablespoon butter
  • 3 teaspoon cocoa powder
  • 1 cup self-rising flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 egg whites
  • 1 vanilla pod
  • 1 cup almonds
  • 1 teaspoon almond extract
  • 1 ounce crystallized ginger

Instructions

  1. First, coat the ginger pieces and almonds in flour. That way, they won't all sink to the bottom of the cake while it's baking.

  2. Dissolve baking soda into sour milk or buttermilk.

  3. Add the vanilla to the milk to get that flavor infused.

  4. Next, cream the butter and sugar together, then stir in the milk.

  5. Sift the remaining dry ingredients together and add to wet ingredients.

  6. Combine the ginger pieces and almonds into the mix.

  7. Beat the egg whites to stiff peaks.

  8. Fold the egg whites into the mixture.

  9. Bake for 30 minutes at 350

  10. Let cake cool before frosting
