    Stupid Pineapple Icebox Cake

    We can never get enough easy dessert recipes. They're great when you're in a pinch and need an effortless treat to serve to your family or friends. This recipe for Stupid Pineapple Icebox Cake is one of our favorites because of its fruity flavor and because it's ridiculously simple to make. Just a few basic ingredients layered together and then chilled in the fridge, that's all it takes to make this delicious pineapple cake. Icebox cake recipes are great for the warm summer months, so stash this gem away for a rainy (or a sunny!) day.

    Ingredients

    • 1 1/2 cup powered sugar
    • 1/2 cup butter
    • 2 eggs
    • 1/2 pint whipping cream
    • 1 cup crushed pineapple
    • 1 (1-pound) box vanilla wafers

    Instructions

    1. Cream powdered sugar and butter well.
       
    2. Add egg yolks that have been beaten until thick and lemon colored.
       
    3. Fold in beaten egg whites.
       
    4. Layer the cake in the following order: 1st layer: 1/2 of the vanilla wafers, ground up.  2nd layer: Batter mixture (sugar, butter, eggs).  3rd layer: Pineapple (drained well).  4th layer: Whipped cream.  5th layer: Remaining 1/2 of the vanilla wafers.
       
    5. Chill for 12-24 hours. Serve with whipped cream and a cherry on top.

    I guess they call it stupid pineapple cake because you would be pretty stupid to eat raw eggs

    This recipe should be removed. It is NOT SAFE to eat raw eggs due to samonella contamination, especially for young children and the elderly.

    The raw egg in this, sounds dangerous. If not for that issue, I would love to try this, because it sounds wonderful.
