Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3 eggs, beaten
  • 1 1/2 cup vegetable oil
  • 2 teaspoons vanilla
  • 1 can (18 oz.) crushed pineapple
  • 1 cup banana, sliced
  • 1 cup pecans, chopped
  • FOR THE FROSTING:
  • 1 (8 oz.) package cream cheese
  • 1 pound confectioners sugar
  • 1 stick margarine
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 325 degrees F.
     
  2. Mix together flour, sugar, eggs, oil, spices and vanilla.
     
  3. Blend in pineapple, pecans and banana.
     
  4. Bake in a tube pan for 75 minutes.
     
  5. Prepare frosting: Beat together cream cheese, sugar, margarine and vanilla until smooth.
     
  6. Once cake is cooled, spread frosting over top of cake.

I wanted to know if you meant 8oz. can of crushed pineapple? Also do you drain the pineapple? What about greasing the tube pan? I didn't get to make this one yet.
