- 1 1/4 cup boiling water
- 1 cup oatmeal
- Egg Mixture
- 1/2 cup softened butter
- 2 eggs
- 1 cup white sugar
- 1 teaspoon vanilla
- Dry Ingredients
- 1 cup brown sugar
- 1/4 teaspoon nutmeg
- 1 1/2 cup sifted flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 teaspoon cinnamon
- store bought white frosting

Preheat the oven to 350 degrees F. Grease 2 round 8 inch cake pans with cooking spray.

In a large bowl, combine the oatmeal with boiling water. Cover with saran wrap and let sit 20 minutes. In a separate bowl, beat butter until creamy. Add in beaten eggs, both sugars, and vanilla. Add to oatmeal mixture.

Sift flour in a bowl. Add baking soda, salt, cinnamon, nutmeg, and brown sugar.

Add dry ingredients to Oatmeal mixture. Stir to combine and pour into greased baking pans.

Bake for 50-55 minutes. Let cool.

Spread frosting over one layer of cake, add second cake layer and top with remaining frosting. Serve warm.
