    Whole Wheat Carrot Cake

    Ingredients

    • 1 c granulated sugar
    • 1 c packed brown sugar
    • 1 c vegetable oil
    • 1 tsp vanilla
    • 4 eggs
    • 1 1/2 c whole wheat flour
    • 1/2 c all purpose flour
    • 1 tsp baking soda
    • 1 tsp baking powder
    • 1 tsp salt
    • 1 tsp ground allspice
    • 1 tsp ground cinnamon
    • 3 c finely shredded carrots
    • 1 c chopped walnuts (optional)

    Instructions

    Heat oven to 350F. Grease and flour a 13x9x2-inch pan. Stir sugars, oil, vanilla and eggs in a large bowl until blended (about 30 seconds), beat for 1 minute. Stir in flours, baking soda, baking powder, allspice and cinnamon. Stir in carrots and walnuts. Pour into pan. Bake until toothpick inserted into centre comes out clean (45-50 minutes). Cool 10 minutes, remove from pan. Cool completely. Serves 15.
