Candied Citrus Slices

Ingredients

  • 2 oranges, sliced 1/8" thick
  • 2 clementines, sliced 1/8" thick
  • 4 kumquats, sliced 1/8" thick
  • 2 c water
  • 2 c sugar

Instructions

Bring sugar and water to a boil in a wide skillet. Using one fruit at a time, add to pan in a single layer. Reduce heat and simmer, uncovered, 20 to 40 minutes until translucent. Remove to a bowl with a slotted spoon. Repeat with remaining fruit. Pour syrup over fruit and refrigerate up to 3 months. Notes: Choose fruit with thin skins and scrub well before slicing.
