New Orleans Pralines

Ingredients

  • 1 cup firmly packed dark brown sugar
  • 1 cup white granulated sugar
  • 1/4 cup water
  • 1/3 cup butter, melted
  • 1 cup pecans, halves and pieces

Instructions

yields 1 1/4 lbs. Combine sugars, water, and butter in deep saucepan. Cook on medium heat, stirring constantly until mixture reaches firm ball stage. Stir in nuts. Remove from heat and drop by spoonfulls onto a buttered slab (or buttered aluminum foil). Work quickly as it cools fast and will get hard in the pan.
