Peanut Patties

Ingredients

  • 1 cup milk
  • 2 1/2 cup sugar
  • 2/3 cup light corn syrup
  • 3 cup raw Spanish peanuts
  • pinch salt
  • 2 tablespoon of margarine
  • 4 or 5 drops of red food coloring
  • 1 teaspoon of vanilla
  • 1 cup of powdered sugar

Instructions

Combine milk, sugar, corn syrup, peanuts and salt in a heavy medium-sized saucepan. Stir to combine well, washing any stray sugar crystals from the sides of the pan with a pastry brush dripped in water. Cook over medium heat until mixture reaches the soft ball stage. Remove from heat. Stir in butter, colouring, vanilla and sugar. Mix until combined and slightly thickened. Spoon into mounds on wax paper.
