    Tomato Barfi

    Ingredients

    • 1 lb. tomatoes, blanched and pulped
    • 2 cups sugar
    • 1 grated coconut

    Instructions

    Mix tomato pulp with sugar (2 cups) and grated coconut together and cook on low heat. When it thickens remove from fire, add cardamoms powder or vanilla essence and 1 tsp. ghee. Spread on shallow pan, cut into cubes when cool.
