Basic Jerk Sauce
Ingredients
- 5 bunches whole scallions, finely chopped
- 3 large cloves garlic, minced
- 3 Scotch bonnet peppers (any color), seeded and minced
- 2 large sprigs of fresh thyme or 2 Tablespoons dried
- 1/4 cup ground allspice (dry pimento berries)
- 2 tablespoons freshly ground black pepper
- 1 1/2 tablespoon slat
- 1 cup water
Instructions
In a large bowl, combine all ingredients except the water. Mix well and add water to form a loose paste.
