Coquito for Christmas
Ingredients
- 5 whole eggs
- 3 can evaporated milk
- 2 can condensed milk
- 2 can coconut milk (preferably Coco Lopez)
- 1 liter white rum or less
- Cinnamon powder to taste
Instructions
If you have never tried this before you have to. It is a classic for Christmas in Puerto Rico and everyone loves it. Beat the five eggs and put them into a large bowl then start adding the ingredients slowly and randomly (one can of this, one of that) keep mixing between additions. When the milk and eggs are all mixed add the liter of rum (I never add the entire liter because we don't like it to taste so much like rum so what I do is that I leave out like a 1/4 of the bottle but you may add as much as you prefer, just be careful not to over do it). Mix again and add the Cinnamon powder to taste. Again, don't over do it. Mix again and drain into another bowl. The recipe makes about 4 bottles and these make great gifts for the Holidays.
