1930s Bologna Casserole
This frugal casserole recipe is made with affordable ingredients that you probably already have!
1930s Bologna Casserole is a great budget-friendly casserole that takes advantages of ingredients you may already have in your pantry and fridge. This easy casserole is a great dinner option that will leave you thoroughly satisfied. This dish was made popular in the 1930s when higher priced meats just were not practical (or even available) to the middle and lower class. Instead, people used things like bologna and other forms of protein (beans and cheese) to help fill them up fast and for long periods of time. You may want to have a side helping of veggies and bread to complete this meal, but it's definitely filling enough on its own.
Ingredients
- 5 slice bacon, chopped
- 1 onion, diced
- 1 (15-ounce) can pork and beans
- 1 (15-ounce) can chili beans with sauce, undrained
- 1 pound all beef bologna, cubed
- 1 jar pimentos, drained
- 1 1/2 cup shredded Cheddar cheese
- hot sauce (optional)

This casserole also makes a great freezer meal! You can cook it at your convenience and then freeze it for a delicious dinner later.
Instructions

Preheat oven to 350 degrees F.

Spray a 3-quart baking dish with cooking spray and set aside.

In a small skillet over medium-high heat, brown the bacon and onions together. When the bacon is crisp and the onions are tender, remove from the heat and drain any excess fat.

In the baking dish, spread cubed bologna, top with pork and beans, chili beans, the reserved bacon and onions, pimentos and, finally, with the shredded Cheddar.

Bake in the oven for 15-20 minutes until the mixture is bubbly and cheese is browning.

Remove from the oven and allow to rest for 10 minutes before serving.
