Barley Casserole

Ingredients

  • 4 tablespoon butter
  • 3 cup chicken or beef broth
  • 2 medium onions, chopped
  • 1/4 teaspoon salt
  • 1/2 pound mushrooms, sliced
  • 1/4 teaspoon pepper
  • 1 1/2 cup pearl barley
  • chopped parsley, for garnish

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Melt butter in a large casserole.
     
  3. Saute onions 2 minutes over medium heat.
     
  4. Add mushrooms and saute another 5-7 minutes.
     
  5. Add barley. Cook until lightly browned.
     
  6. Add 2 cups of broth, salt and pepper.
     
  7. Bring to a boil. Cover, reduce heat, and bake 45 minutes.
     
  8. Add remaining 1 cup of broth.
     
  9. Return to oven and bake 30 minutes more.
     
  10. Garnish with chopped parsley.
