Beef Taco Bake

Ingredients
- 1 pound ground beef
- 1 can (10 3/4 ounces) condensed tomato soup
- 1 cup salsa
- 1/2 cup milk
- 6 flour tortillas (8-inch) or 8 corn tortillas (6-inch), cut into 1-inch pieces
- 1 cup (4 ounce) Cheddar cheese, shredded
- 1/2 cup green onions, chopped
Instructions
- Preheat oven to 400 degrees F.
- In medium skillet over medium-high heat, cook beef until browned, stirring to separate meat.
- Pour off fat. Add soup, salsa, milk, tortillas and half the cheese.
- Spoon into 2-quart shallow baking dish. Cover.
- Bake for 30 minutes or until hot. Sprinkle with remaining cheese.

When you feel like eating tacos, but want to change it up a bit, you can have all the flavor of tacos in casserole form. To make this a healthier version, I would make the following changes. I would use lean ground beef, healthy request tomato soup, skim milk, and reduced fat cheddar cheese. For the tortillas, corn would be best. Sliced olives would be a good addition to this dish. The casserole could be served with a dollop of lite sour cream, if desired.
