Cheesy Bacon and Ham Casserole

Ingredients

  • 1/2 pound bacon
  • 1/2 pound ham, cooked and chopped
  • 3/4 cup quick cooking grits
  • 1 pound velveeta
  • 1/4 cup butter
  • 6 large eggs, lightly beaten
  • 1/2 cup milk
  • 2 teaspoon baking powder
  • 1/2 teaspoon pepper

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Cook bacon in large skillet until crisp; remove bacon, and drain on paper towels, reserving 1 tablespoon drippings in skillet.
     
  3. Crumble bacon and set aside. Cook ham in reserved drippings in skillet over medium heat until browned.
     
  4. Cook grits according to package directions. Remove from heat; stir in cheese and butter until melted.
     
  5. Stir in bacon, ham, eggs and remaining ingredients. Pout into a lightly greased 13 x 9 baking dish. Bake at 350 degrees for 45 minutes or until set.
