Cheesy Ritz Cabbage Casserole
Quick, Cheesy Ritz Cabbage Casserole is an easy dinner for a busy household. Ritz crackers are crumbled atop creamy soup and melted cheese. Additional cabbage makes this casserole affordable and extra nutritious!

Ingredients
- 1 small cabbage, coarsley chopped
- 1 medium onion, chopped
- 1/4 cup butter
- salt and pepper to taste
- 1/2 cup mayonnaise
- 1 can cream of chicken or mushroom soup
- 1/4 cup butter
- 1 cup shredded sharp Cheddar cheese
- 1/2 to 1 stack of Ritz crackers or any butter crackers, finely crushed
Instructions
- Preheat to 350 degrees F.
- Place cabbage into a casserole dish, sprinkle the onions over top of the cabbage.
- Melt 1/2 stick of butter and pour over the cabbage. Sprinkle with salt and pepper.
- In a small bowl, mix soup and mayonnaise and spread over the cabbage mixture.
- Melt the other 1/2 stick of butter and mix with the grated cheese and crushed crackers-spread over top of casserole.
- Bake for about 45 minutes or until top is brown and inside is bubbly.

When you have a glut of cabbage from your garden, this is one very delicious receipe. Great for vegetariens or for the "no meat" dinner. If you must have meat, cook a kilbasa or other sausage to have with the casserole. Very good!
