Cheesy Vegetable Casserole

Ingredients

  • 1 small bag frozen vegetables (corn, green beans, potatoes, carrots)
  • 3/4 cup butter, melted
  • 1/2 cup onion, chopped
  • 1 package butter crackers, crushed
  • 1 cup cubed Velveeta cheese
  • 1 cup shredded Cheddar cheese

Instructions

  1. Pre-heat oven to 350 degrees F.
     
  2. Boil the vegetables until tender. Drain.
     
  3. Put vegetables in casserole dish and add melted butter; stir. Add cubed Velveeta and Cheddar cheese.
     
  4. Top with crushed crackers and additional melted butter. Bake for about 20 minutes.
