Classic Tamale Pie
This recipe has all the components you would expect in a traditional tamale pie: beef, corn, olives, cheese and of course, a cornmeal crust. This is great weeknight meal and is also impressive at dinner parties.

Ingredients
- 1 pound ground beef
- 1 cup chopped onion
- 1 cup chopped green pepper
- 2 8-ounce cans tomato sauce
- 1 can whole kernel corn (drained)
- 1/2 cup pitted ripe olives, chopped
- 1 clove garlic, minced
- 1 tablespoon sugar
- 1 teaspoon salt
- 2 1/2 teaspoon chili powder, or to taste
- Dash of pepper
- 1 1/2 cup cheddar cheese, grated
- 3/4 cup yellow cornmeal
- 1/2 teaspoon salt
- 2 cup cold water
- 1 tablespoon butter
Instructions
- Preheat oven to 375 degrees F. Cook meat, onions, and green pepper in a large skillet till meat is lightly browned and the vegetables are tender. Stir in tomato sauce, corn, olives. garlic, 1 teaspoon of salt, chili powder, and pepper. Simmer 20 to 25 minutes or until thick. Add cheese; stir until melted. Turn into greased 9x9x2 baking dish.
- Make Cornmeal Topper: Stir cornmeal and 1/2 tsp salt into cold water. Cook and stir till thick. Add butter; mix well. Spoon over hot meat mixture.
- Bake about 40 minutes or until the cornmeal mixture is done.
