Crazy Beef 'n' Beans

Easy beef recipes are perfect for the budget conscious. This hearty recipe is jammed packed with beef and beans and a splash of Tobasco sauce for that crazy, zesty spice you adore. Eat it over rice or by itself, it's good either way.

Ingredients

  • 2 tablespoon oil
  • 1 onions, diced
  • 1 red bell pepper, diced
  • 2 cloves of garlic, chopped
  • 1 1/2 pound ground beef
  • 1 can (7-ounces) tomato paste
  • 2 can pureed tomatoes
  • 1 teaspoon cracked black pepper
  • 2 teaspoon sweet paprika
  • 2 tablespoon powdered/ground cumin powder
  • Tabasco sauce, to taste
  • 2 can red kidney beans, drained

Instructions

  1. Place a pot on high heat and warm 2 tablespoons of oil. Toss in onions, red bell pepper and garlic, and stir for about 3 minutes or until softened. Remove vegetables to a separate bowl.
     
  2. Return pot to heat and brown ground beef . When meat is brown and sizzling, tip in cooked onion, capsicum and garlic mix, tomato paste, pureed tomatoes, cracked pepper, sweet paprika, cumin powder and Tabasco to taste.
     
  3. Stir gently until combined, and add enough water to just cover ingredients.
     
  4. Reduce heat and simmer for 1 hour. Check after 55 minutes, and add red kidney beans.  Cook for an additional ten minutes.  Serve over white rice or enjoy by itself.
