Crazy Garlic Mashed Potato Casserole

Ingredients
- 2 whole heads garlic
- 8 pounds russet potatoes
- 8 tablespoons butter
- 1/4 cup green onions, chopped (optional)
- 16 ounces light sour cream
- 1/2 cup low fat milk
- 1 1/2 teaspoon salt
- freshly ground pepper to taste
Instructions
- Preheat oven at 425 degrees F.
- Cut about 1/2 inch from the top of the heads of garlic. Wrap garlic in foil and roast in for 45 Minutes. Remove from oven. When cool squeeze garlic out of skin into a small bowl and mash with a fork.
- Turn down oven to 350 degrees F.
- Peel potatoes and cut into large chunks. Steam until tender and drain.
- Mash potatoes, garlic, butter, green onions, sour cream, milk, salt and pepper until fluffy. Spoon into non-stick casserole. Cook for 45 minutes at 350 degreesnF.

This is a good side dish to serve at a large dinner or potluck. Mashed potatoes are always a popular item so they would definitely be something that everyone will enjoy eating. I would use skim milk in this recipe. Instead of adding chopped green onions, I would stir in reduced fat shredded cheddar cheese into the mashed potatoes. Cheesy mashed potatoes are delicious.
