- 1/2 cup grated sharp cheddar cheese
- 1/2 cup sweet onion, finely chopped
- 1/2 cup celery, finely chopped
- 1/4 cup bell pepper, finely chopped (you can mix red and green)
- 1/2 pint (8-ounce) sour cream
- 1 can cream of celery soup (undiluted)
- 1 can (11-ounce) white shoe peg corn, drained
- 1 can (14.5-ounce) French style green beans, drained
- 1 tube Ritz crackers, crushed
- 1/2 cup melted butter
Instructions
- Preheat oven to 325 degrees F.
- Mix first 8 ingredients; add pepper to taste. Pour into a 13x9 glass or metal baking dish.
- Mix butter and Ritz crackers; spread over top of casserole. Bake (uncovered) for 45 minutes, or until bubbly and golden brown.
