Easy Chicken and Rice
This chicken and rice recipe combines savory ingredients for an impressive but simple dinner. You get your servings of vegetables and protein all in one Easy Chicken and Rice dish.

Ingredients
- 1 cup uncooked brown rice
- 2 cups water
- 1 teaspoon or less salt
- 1 tablespoon parsley flakes
- 3 pounds whole frying chicken (or boneless skinless chicken breasts)
- Dash of pepper
- 1/2 cup chopped onion, optional
- 1/2 cup chopped pecans, optional
- 1/2 pound mushrooms, sliced, optional
- 1/2 cup chopped celery, optional
Instructions
- Combine rice, water, 1/2 teaspoon salt, butter and parsley. Mix well. Bring to a boil.
- Rinse chicken inside and out and pat dry. Sprinkle with salt and pepper. Place over rice; reduce heat.
- Simmer; tightly covered, for 45 to 60 minutes or until water is absorbed and chicken is tender.
- For a fancier meal, saute any or all of the optional ingredients and add to rice before seasoning.

This sounds rather a plain tasting dish. If I made something like this, I would use some chicken base added to the water to cook the rice in or use a can of coconut milk as part of the cooking liquid. If using coconut milk, I would then season the chicken with S&P, Curry powder, and a couple dashes of Paprika. I would also serve steamed broccoli on the side.
