Guilty Pleasure Party Potatoes

Ingredients
- 5 pounds bag potatoes, peeled, boiled and drained
- 8 ounces sour cream
- 1/2 cup butter, melted
- 1 package scallions, cut up with tops included
- salt, to taste
- pepper, to taste
- garlic powder, to taste
- 4 ounces whipping cream, whipped
- cheddar cheese, grated
- crispy fried bacon, crumbled
Instructions

Preheat oven to 350 degrees F.

Add sour cream, melted butter and scallions (with tops included) to boiled potatoes. Sprinkle with salt, pepper and garlic powder to taste.

Mash all together until smooth and place in large casserole dish.

Top with whipped whipping cream, grated cheddar cheese and crispy fried bacon crumbles.
- Bake for 20 minutes.

This sounds like a great side dish that will feed many people at a potluck, or a hungry family with leftovers to enjoy the next day. The mashed potatoes are rich and creamy with cheddar cheese and bacon as toppings. To lighten this recipe, I would use lite sour cream, fat free half and half, and reduced fat cheddar cheese. These potatoes will be enjoyed by everyone.
