Hot Potato Casserole
You won't want to pass this Hot Potato Casserole! This recipe uses butter, sour cream, and milk for the creamiest onion and potato casserole recipe you've ever sunk your fork into! Holiday or weeknight meal, this is a casserole for any occasion.

Ingredients
- 1 1/2 pound old potatoes
- 2 ounces butter
- 1 onion
- 1/3 cup sour cream
- 2 tablespoons milk
- salt and pepper, to taste
- paprika, to taste
Instructions
- Pre-heat oven to 350 degrees F.
- Peel and chop potatoes. Cook in boiling salted water until tender; drain. Mash well.
- Melt butter in pan; add peeled and chopped onion. Cook until transparent. Add to potatoes with sour cream and milk; mix until smooth. Season with salt and pepper.
- Spoon potato mixture into ovenproof dish. Sprinkle with paprika. Bake about 15 minutes. Serve with roasts, chops, etc. If there is any left over, cut into squares and fry up with some bacon.
