Ingredients
- 1 tablespoon butter or margarine
- 1 pound ground beef
- 1 onion, chopped
- 2 15 ounce cans chili without beans
- 15 ounces can red kidney beans, rinsed and drained
- 1 teaspoon chili powder
- 8 1/2 ounces box corn muffin mix
- 1 egg
- 1/2 cup milk
Instructions
- Preheat oven to 400 degrees F. Coat a 2-quart casserole dish with nonstick cooking spray.
- In a large skillet, melt butter or margarine over medium-high heat. Add ground beef and onion and cook until beef is brown and onion is tender, stirring occasionally; drain. Add chili, kidney beans, and chili powder; mix well. Spoon into the casserole dish.
- In a medium bowl, stir together corn muffin mix, egg, and milk. Pour over the beef mixture and bake 25 to 30 minutes, or until the center of the corn muffin topping is set.
