Mexican King Ranch Chicken

Ingredients
- 2 chickens, cut up
- 12 medium corn tortillas
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 tablespoons butter
- 2 cups cheddar cheese, shredded
- 1 1/2 teaspoon chili powder
- 1/4 teaspoon garlic salt
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 16 ounces stewed tomatoes
- Tabasco sauce to taste
Instructions
- Preheat oven to 375 degrees F.
- Simmer chicken in lightly salted water until tender. Remove chicken pieces from water and reserve broth; let chicken cool slightly, then skin and bone and cut into bite-size pieces.
- Soak tortillas in broth about 15 minutes.
- Saute onion and bell pepper in butter and sprinkle over chicken. Place tortillas in a 4-quart casserole and top with chicken. Then layer other ingredients in this order: onion and bell pepper, cheese, chili powder and garlic salt, chicken soup, mushroom soup, and tomatoes mixed with Tabasco.
- Bake in a 375 degree oven 30 minutes.

Tis sounds almost identical to my King Ranch Special recipe. The only real difference I see is that, instead of the tortillas, soaked in broth, I place "unsoaked" corn tortilla chips in the bottom of my pan. My kids snarf this up real quick. Delicious!
