Ingredients
- 1 1/2 cup sliced fresh mushroom
- 1/2 cup onion, chopped
- 1/2 cup green pepper, chopped
- 2 tablespoon butter or margarine
- 1 can (10.75-ounces) condensed cream of chicken soup, undiluted
- 1/2 cup milk
- 1/4 cup chopped pimientos
- 3/4 teaspoon dried basil
- 1 (8-ounces) rotini pasta, cooked and drained
- 2 cup cottage cheese
- 1 1/2 cup (6-ounces) Cheddar cheese, shredded
- 1/2 cup Parmesan cheese, grated and divided
- 3 cup cubed cooked chicken
Instructions
- Preheat oven to 350 degrees F.
- In a skillet, saute mushrooms, onion and green pepper in butter until tender. Add soup, milk, pimientos and basil; mix well and heat through.
- Place pasta in the bottom of a greased 13x9x2 inch baking dish. Combine cottage cheese, cheddar and 1/4 cup Parmesan; spread over pasta. Top with chicken.
- Pour sauce over chicken. Sprinkle with remaining Parmesan. Cover and bake at 350 degrees F for 50-55 minutes or until bubbly.
