Ingredients
- 1 (10-1/2-ounce) can cream of chicken soup
- 1 (10-1/2-ounce) can cheese soup
- 1 (10-ounce) can Rotel tomatoes or diced tomatoes with chilies, undrained
- 2 pound skinless boneless chicken breasts, cut into 1-inch cubes
- 1 cup diced green pepper
- 1 cup diced onion
- 1 clove garlic, finely minced
- 1 tablespoon paprika
- 1 tablespoon chili powder
- 2 teaspoon ground cumin
- 1 (16-ounce) bag Mexican blend shredded cheese, divided
- 10 corn tortillas, cut or torn into quarters
- 3 cup crushed corn chips

Instructions

In a large bowl, combine cream of chicken soup with cheese soup and canned tomatoes. Mix well.

In another bowl, combine chicken, garlic, pepper, onion, and spices. Mix together with a spoon or spatula until everything is evenly coated.

In a greased or non-stick casserole dish, add a layer of the chicken mixture followed by a layer of the soup mixture.

Next, add a layer of corn tortillas followed by a layer of shredded cheese.

Continue this layering until your casserole dish is nearly full or until you run out of ingredients.

In an oven preheated to 350 degrees F, bake for 20 minutes.

When done, take out of the oven and spread a layer of crushed corn chips on top followed by a final layer of shredded cheese.

Bake for 10 more minutes. Allow to cool slightly and serve.
