    One Pot Sausage and Rice Skillet

    Ingredients

    • 1/2 pound smoked sausage
    • 1 cup rice, uncooked
    • 1 can (about 14 ounces) diced tomatoes
    • 1 cup water
    • 1 can ranch-style beans, drained
    • picante sauce to taste

    Instructions

    1. Cut sausage in half lengthwise; cut crosswise into 1/4-inch slices.
       
    2. In a 10-inch skillet, combine rice and sausage; saute. Add tomatoes, beans, and picante sauce and mix well, breaking up tomatoes with a spoon.
       
    3. Add water and bring to a boil.  Reduce heat, cover, and simmer 20 minutes.
       
    4. Remove from heat and let stand covered for 5 minutes.
       
    5. Top, if desired, with sliced avocado, sour cream, and chopped fresh cilantro.
