One Pot Sausage and Rice Skillet

Ingredients
- 1/2 pound smoked sausage
- 1 cup rice, uncooked
- 1 can (about 14 ounces) diced tomatoes
- 1 cup water
- 1 can ranch-style beans, drained
- picante sauce to taste
Instructions
- Cut sausage in half lengthwise; cut crosswise into 1/4-inch slices.
- In a 10-inch skillet, combine rice and sausage; saute. Add tomatoes, beans, and picante sauce and mix well, breaking up tomatoes with a spoon.
- Add water and bring to a boil. Reduce heat, cover, and simmer 20 minutes.
- Remove from heat and let stand covered for 5 minutes.
- Top, if desired, with sliced avocado, sour cream, and chopped fresh cilantro.
