Poor Man's One Pot Rice and Beans
The ol' college staple has just been upgraded. This Poor Man's One Pot Rice and Beans recipe has all the comfort without the cost. This one pot meal recipe is sure to satisfy your hunger without depleting your wallet.

Ingredients
- 2 tablespoons vegetable oil
- 1 cup long-grain rice, uncooked
- 1/2 cup onion, finely chopped
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon ground cumin
- hot chili powder to taste
- 2 large tomatoes, peeled, seeded, and chopped
- 1 1/2 cup chicken stock or broth
- 1 can black beans
Instructions
- Heat oil in 10-inch skillet over medium heat until hot. Add rice and cook, stirring constantly, until rice turns opaque white, about 2 minutes.
- Quickly add onion and saute over medium heat for 1 minute.
- Stir in garlic, salt, cumin, and chili powder. Add tomatoes, stock, and beans, stirring constantly for 2 minutes.
- Bring to a boil, then reduce heat to low. Simmer, covered, until rice is tender and all liquid is absorbed.

I just made this and it is fantastic! It is the best beans and rice I have ever eaten. I added a 1/2 tsp of paprika and some sweetcorn and it's wonderful. Thank you so much!
