Silly Nacho Casserole

If you love nachos, you'd be crazy not to try this Silly Nacho Casserole! Turn your favorite appetizer into a tasty main dish for dinner. This is one of the easiest ground beef casseroles to make. Everyone is sure to love it, especially the kids!

Ingredients

  • 1 1/2 pound ground beef (browned)
  • taco seasoning (to taste)
  • 1 cup salsa
  • 3 cups crushed nacho cheese corn chips (ie. Doritos)
  • 2 cups Cheddar cheese, shredded
  • 1 cup sour cream
  • extra cheese, salsa, lettuce, and tomato, optional

Instructions

  1. Preheat oven to 400 degrees F.
     
  2. Brown ground beef. Drain and add taco seasoning to taste.
     
  3. Stir in salsa and heat thoroughly.
     
  4. Prepare pan by spraying lightly with cooking spray.
     
  5. Place half of corn chips in bottom of prepared pan.
     
  6. Spread meat mixture over chips.
     
  7. Spread sour cream over meat mixture. Top with cheese and remaining chips.
     
  8. Bake until cheese is melted.
     
  9. Note: Add zip with extra salsa, cheese, lettuce and tomato after baking or on the plate before serving.

Nachos for dinner sounds fun. Instead of having tacos, change things up a bit! For a healthier version of this recipe, I would use lean ground beef or ground turkey, reduced fat cheddar cheese, and lite sour cream. Instead of using nacho cheese flavored tortilla chips, I would substitute plain tortilla chips. Also, I would not crush the tortilla chips, but leave them whole, just as nachos are usually served.

This sounds really good, as far as the soggy chips, I'm thinking of layering the bottom of the pan with soft corn tortillas and just adding the crunchy ones on top...And adding a layer of refried beans too. I'll let you know how that goes!

What size casserole? how long do you bake it?

We have been doing this for years & love it. But instead of taco seasoning, we use chili seasoning -- not chili powder, but the chili season you find in a packet.

This tasted awesome! The only problem was with the leftovers, when the Doritos had gotten soggy. I scraped as much off as I could, replaced with fresh Doritos, and it was awesome again! I will definitely do the Doritos "as-needed" next time instead of covering the entire casserole at the beginning. Otherwise, delicious!
