Southwestern Sausage Supper

Ingredients
- 1 pound sausage
- 1 cup shredded cheddar cheese
- 1 medium onion, chopped
- 1 (8-1/2-ounce) package corn muffin mix, prepared according to directions
- 1 (8-ounce) can tomato sauce
- 1 package taco seasoning mix
- 1 cup whole kernel corn
- 2 tablespoon water
- 2 jalapeno peppers, chopped
- 1 (15-ounce) can black beans, drained
- sour cream
- green onions, thinly sliced

Preheat oven to 350 degrees F.

Brown and crumble sausage in large skillet. Add onions and cook until transparent.

Stir in tomato sauce, water and all but 1 teaspoon of the taco seasoning. Simmer to blend.

Remove from heat and add black beans.

Pour mixture into greased 9x13 glass baking dish. Sprinkle with 3/4 cup shredded cheese.

Prepare corn muffin mix according to package. Combine corn and jalapenos with mix and spread over top of sausage mixture.

Sprinkle with 1/4 cup cheese and 1 teaspoon taco seasoning.

Bake 30 minutes until lightly browned and cornbread is set. Cut into squares. Garnish with sour cream and green onions. Refrigerate leftovers.
