Ingredients
- 8 chicken drumsticks, skin removed
- 8 ounces lowfat smoked sausage, sliced
- 2 cans (16-ounces) barbecued baked beans
- 1 can (15-ounces) whole kernel corn
- 1 can (15-ounces) black beans, rinsed and drained
- 1 3/4 cup frozen baby lima beans, thawed
- 1 1/2 cup chopped onions
- 1 can (8-ounces) tomato sauce
- 1 1/2 cup broken corn tortilla chips, crushed
Instructions
- Preheat oven to 375 degrees F. Have a shallow 3-quart baking dish ready.
- Mix all of the ingredients except corn chips in baking dish. Cover and bake 1 hour.
- Uncover, sprinkle with chips and bake, uncovered, 15 minutes longer or until the chicken is cooked through.

I'm not crazy about the idea of the chicken legs. I would like to try this with some boneless, skinless chicken thighs...saute them first, then add to the other ingredients and bake. Thighs will stay moist and not get rubbery like, perhaps, breast meat would. Ideas, anyone? I will have to try this! sounds very good.
